Ecological Systems and Devices Annotation << Back Allocation of fractions of collagen from skins of agricultural animals by aqua-salt extraction Baer N.A., Leonov А.U, Nekljudov A.D., Ivankin A.N. The fractions of collagen collected using aqua-salt extraction of collagen-containing raw material of an animal origin: cattle sinews and hypodermic, pigs integument. It demonstrates, that the effective extraction of the collagenic fractions, which possess maximum aqua- and fat-binding abilities, occurs at the temperature below 50°C as a result of the extraction using salt aqueous solutions containing from 1 to 10 % of sodium chloride. Effective constants of collagenic fractions extraction ratio at рН 6,5, 9,0 and 12,0 make accordingly (min - 1): (2,7±0,1) 10–3; (6,2±0,5)•10-3 and (15,4±0.7)•10-3. The discovered optimum conditions allow to acquire the collagenic protein fractions, which are of a practical interest for the food-processing industry.
