It was investigated opportunity to use enzyme from bacterium of genus Xantamonas rubrilineans with peptides activity immobilized on AI2O3 for hydrolysis mixtures of peptides. It was created kinetic schemes and equations, which can describe process of hydrolysis such complicated mixtures. It was determinate the hydrolysis of these mixtures increased of contents of free amino acids from 2 to 3 times and decrease for 2 times molecule mass of peptides.
