ECOLOGICAL VALUATION OF MODIFIED STARCHES BY THE METHOD OF DYNAMIC LASER LIGHT SCATTERING |

Currently, various chemically modified starches are widely used in the Food Industry. Comparing with the usual natural starch, they have several advantages, for example, it is easier to dissolve in cold or hot water, less susceptible to thermal decomposition during heat treatment. Mayonnaise, ketchup, yogurt, various pastes, soups are made from modifi ed starches. In our work for the first time was determined the size of nano- and microparticles, which form in aqueous solutions by various modified starches. This kind of starches were obtained from tapioca and can be used widely in the food industry. For this determination was applied the Dynamic Light Scattering (DLS) method and the «Zetatrac» Laser Nanoparticle Analyzer (USA). It was discovered, that the particle size in different starches is specific for different varieties and depends on the chemical composition of this valuable product of processing agricultural raw materials. It was also established that some of their modified starches form true nanoparticles in sizes of 3…24 nm in aqueous solutions, while others form large molecular aggregates of 5 μm.
